I don't know what brunch in Japan would really be like, but I would hope that it's something like the experience I had at Bessou. Bessou takes flavors and ingredients from Japan, but presents them in with an American (and sometimes Jewish) spin, to make them more relatable to New Yorkers. For example, their breakfast sandwich comes on Texas sized Japanese toast, and filled with herbed scrambled eggs, tomato-braised Berkshire pork belly, cucumber, and kewpie mayo. What they serve as Kabocha Shakshuka, is a take on Japanese curry, with curried roasted kabocha, baked egg, miso tofu, and labne! But my favorite dish had to be the Beef Kakuni Hash which was the perfect balance of savory, sweet, salty, and spice; with the top of the bowl lined with a mustard that might be too hot for some, but I thought balanced the dish really well. Really a one of a kind brunch in NYC.
